Cuban Cilantro Chicken
This recipe is from Cara Bakun, a roommate of mine at UCI in 1995.
- 4 whole, boneless chicken brests
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 large onion, finely chopped
- 2 garlic cloves, minced
- 2 green apples, peeled, cored and chopped
- 1 tablespoon ground coriander
- .25 cups chopped cilantro
- .25 teaspoon tumeric
- .5 teaspoon ginger, ground
- .5 teaspoon salt
- .5 teaspoon cumin
Cut chicken breasts into bite-sized pieces in a large skillet, heat
olive oil with butter over medium heat. Add chicken and saute until
lightly browned. Add all other ingredients. Cover after stirring and
simmer for 10 min over medium-low heat. Stir well.
